As grim as the war is, what would be interesting in years to come is the new communities (and food) that form due to it. e.g. A new 'Little Russia' may form in South Korea of all places due to the high number of people that fled there from Russia to a country that doesn't have strong cultural ties to Slavic or Russian culture. And as in the past, many would never go back and would stay. And as with Germany, a highly ageing population means the government wants them to stay as most who fled are educated and of prime working age. But hey, as you have documented, refugees and emigration due to government persecution and/or belief systems is a strong part of food history.

After 20 years of comming to Thailand for business and yes visiting Pattaya mostly north pattaya i can say 100% there are great things to eat here, just because of its notorius beginings as a red light area for U.S. servicemen doesnt mean it hasent grown up it has food wise hotel wise even beach wise its not a fancy area but there are many high end restaurants but still has great eats at low prices for the masses..
You missed 'Harlan's', 'The Bull', 'Patrick's', etc., etc., etc…

Nice to see a video about Pattaya that isnt degrading, maybe take your hat off when you eat its disrespectful in any culture! And the airport is not halfway between Bangkok and Pattaya suggest you look at google maps! Food cultures change to attract tourists everywhere, Pattaya is no different, you can still get all the food you get in Chiang Mai or Bangkok, you may just have to look harder!

I went to a resort in Thailand and looked through the guest book where everyone signed and said where they were from. This was the early 2000s and I was surprised to see how many post-Soviet countries were represented. And then Europeans. Then Americans.

My dad said Thai people didn’t really know how to eat lobster until Americans came to Thailand and told them they’d buy them. The fishermen used to catch them and just throw them back in the water.
OMG, Lobster Thermidor. That’s a blast from the past. 😂
My family in Thailand act like Pattaya doesn’t exist. It’s like no respectable Thai person will go there.
